Hello Olga ,
I want to add to this , that I have not been to Ukraine , many times. But I have tasted borsch and variki.I am not a picky person , when it is about food and dinner.
So , I believe that I will manage ,with the local and national dishes.I have no experience with the jellied cold meat dish , and I am sure , that I did not had shooba either.
For me , the borsch was really tasty , and was rather good. The variki - I hope that I say it the right way - was not too bad. This is meat covered in flour. The meat tasted , as if it was from a canned meat.
Here we call it " corned beef".It surely tasted like that , but I was assured , that it was not the meat from the can.
Anyway , for me there is nothing to worry about. And for my future wife , well she should cook , what she likes.
We all have our own favourite food.So , it`s good to have some variation.
So , it will be a culinary adventure
