I have no ideas, but if you find a great restaurant serving ethnic Russian style, then let me know.  Elegant ambiance, excellent service, but the cuisine is drawn from the hereditary peasant.  Ethnic Georgian can work also but is secondary.

Look at the men painted by Ilya Repin and imagine what they eat.  A wonderful restaurant like that!  A jewel.. Then shout!
